Q&A with Elly Mwaikambo, Head Chef at Riverside Studios

Elly Mwaikambo joined Riverside Studios as Head Chef in November, 2022. Travelling around the world, Elly’s recipes are inspired by a wealth of experience and different walks of life. We sat down with him to find out more...

WHAT ARE YOUR FIRST MEMORIES OF COOKING?

My mum worked as a diplomat and cooked for communities in New Dehli—offering different cuisines without any recipes to follow and often improvising dishes. I was young at the time, but I remember the experience of tasting these different foods and flavours quite vividly—these were some of my first memories.

WHAT ARE THE BIGGEST INSPIRATIONS BEHIND YOUR DISHES?

I’ve travelled all around the world—Vietnam, Thailand, Nepal, New Delhi, Tanzania, East Africa, South America, Ethopia. I’m really inspired by Asian recipes and the exposure to such diverse food has created this unique fusion of flavours in my dishes. Working in different environments, restaurants and hotels over the years has taught me to work well as a team in the kitchen and to lead others to do the same.

WHAT IS YOUR FAVOURITE DISH ON RIVERSIDE’S BAR & KITCHEN MENU?

“That’s like asking who is your favourite child”. I create all my dishes with passion. I travelled to Egypt a long time ago—the falafel dishes are so different over there to what I experienced in London. I want to make my dishes, including Riverside’s Mediterranean Falafel salad as authentic as possible. The dishes are catered to everyone—Vegan, Vegetarian, Gluten Free... the menu at Riverside Studios is accessible and inclusive.
